Chickens have light and dark meat, just like turkeys, but Americans have a distinct preference for light chicken meat. The majority of chickens slaughtered in the U.S. are effectively split in half for sale with the white meat staying in the U.S. and, historically, the dark meat being shipped to Russia and Asia.
